This has to be my new favorite dip to take to random parties. I was looking for something interesting to bring to a football, since the standard cheese dips, chicken dips, veggie trays and such were already taken care of. I love that it is an unique enough dish that I don't have to worry about other people bringing something similar, and it is always a big hit! It is so simple to make, and equally delicious. Here's what you do.
Spread the hummus evenly in a shallow baking dish. I used a glass pie plate. In a small bowl, combine 5 ounces of plain Greek yogurt, 1 tablespoon of chopped, fresh parsley, and a teaspoon of fresh lemon juice, and carefully spread over the hummus in a thin layer. Sprinkle feta cheese, diced tomato, diced cucumber, and quartered Kalamata olives. You could substitute ripe olives, but honestly, its worth the extra cost and hassle to use Kalamata.
Serve with sliced cucumber, bell pepper, carrot sticks and pita bread triangles and prepare yourself for lots of compliments!
