I could have just left out the tahini and made the recipe as listed, and have many times, but since this was for a party, I wanted my hummus to taste as authentic as possible. Here's how to make this yummy dip.
Start by grinding about 1/4 of a cup of sesame seeds into a fine flour. You can do this in a coffee grinder, Magic Bullet Blender, or I suppose a mortar and pestle, although I wouldn't recommend it. Strain one 15 ounce can of chick peas, reserving 1/4 cup of the juice. Juice half a lemon and finely chop two garlic cloves, and you are ready to blend. Throw everything into your trusty food processor, and add a half cup of extra virgin olive oil, a teaspoon of salt and a dash of pepper. Toss in a couple tablespoons of fresh chopped parsley if you've got it and process until it is smooth, creamy and delicious.
