Into a small mixing bowl, add 1 TBSP orange zest, 2/3 cup orange juice, Dijon mustard, a dash of salt and pepper and 4 TBSP olive oil and let your preschooler whisk until well-incorporated. Stir in chopped basil.
Meanwhile, combine 2.5 cups of water, lentils and a pinch of salt in a medium sauce pan and heat to boiling. Reduce heat to low and simmer covered for about 30 minutes. Drain lentils well and set aside.
