If you like coleslaw you will love this lower calorie, tangy version. It is so easy to make at home and is a really frugal recipe.
Thinly slice a half a head of cabbage, two carrots, and one medium onion and place in a large bowl.
In a small bowl, combine 1/2 cup of mayonnaise, and 2-4 tablespoons raw apple cider vinegar (you could substitute rice vinegar). Add about 1/2 teaspoon salt, some fresh cracked pepper and a teaspoon of paprika and stir to combine. If you have some on hand, toss in some chopped fresh dill and parsley. Toss over the veggies and you're done. So yummy and good for you too!
